Couture Cakes: The Pretty Sugar Cake Co

Talented baker Nicola Nicholls of The Pretty Sugar Cake Co, serves-up show-stopping creations that are equally impressive in looks and taste. Here she explains to UNVEILED how her delicate detailing and delicious flavours, sprinkled with a dash of individuality are a winning recipe for the perfect wedding cake.

When did you first begin baking?

My sweet tooth and love of cake started from an early age. As a child my nanas baked nearly every day and I learned all the traditional fundamentals from them. 

When did you set up The Pretty Sugar Cake Company and what do you aim to bring to the industry?                                                 

The Pretty Sugar Cake Company was founded in 2013. I discovered the fabulous world of couture cake when planning my own wedding. I made my own wedding cake and it was then I discovered a hidden talent for cake decorating and a passion for pretty sugar craft. With a background in fashion, art and visual merchandising, designing and creating wedding cakes allows me to indulge my passion for pretty styling and delicious cake!   

How would you describe the style of your cakes?

My style is elegant and pretty, with a sharp finish for a contemporary edge. My passion is pretty, delicate sugar craft, such as sugar flowers and lace work. 

And what about taste?

All our cakes are freshly baked to order using the very best and freshest ingredients to ensure the cake tastes every bit as amazing as it looks. Couples can choose from a list of ten popular flavours, from a classic vanilla and raspberry to less conventional options like sticky ginger. As my service is truly bespoke I’m also happy to do flavours that aren’t on the list.  

What is the process if a couple picks you to make their wedding cake?

I offer complimentary wedding cake consultations from my home studio in Ripponden, West Yorkshire. It’s an opportunity for me to meet a couple and chat in more detail about their wedding plans, what kind of cake they might like and, of course, to sample some delicious cake flavours of their choice.  

What should couples look for in a cake supplier?

I would always recommend that couples choose a cake supplier whose signature style appeals to them and complements the style of their wedding day. Also, always sample the cake first, I am a firm believer that the cake must taste as good as it looks! 

Where can couples find inspiration for their cake design?

My designs are often inspired by the wedding flowers, stationery, colour palette and theme of the wedding day so it’s great if the couple have decided on some of these details prior to our consultation. I find Pinterest, Instagram and wedding blogs to be fabulous sources of wedding inspiration. 

In your opinion, why is the cake such a special part of a wedding?

Weddings can be anything couples dream them to be now, but the cake seems to be a tradition that always features, albeit in many wild and wonderful forms! Long may that tradition continue!  

In addition to the cakes, what other sweet treats do you provide for weddings?

I offer mini individual cakes, cupcakes, cookies and cake pops, which can coordinate with the cake or other details from the wedding day. My cookie favours personalised with the couple’s initials are particularly popular and work perfectly as a name place setting too. 

Finally, what is it about your job that you love?

I love meeting couples and being let in on all their wedding secrets; hearing about all the little details that will make the day unique to them, and, especially, how we can incorporate those details into their cake. The other part of my job I particularly love is being part of the set-up of the wedding day – arriving at the venue in the morning alongside the venue dressers and florist, and seeing all their plans come together.
